The original Woodstock property was named by English settlers, after their hometown of Woodstock, near Blenheim Palace in Oxfordshire, England. The Townsend Family, received a Crown Lease for the property in 1905, built a home with a brick well and established the estate as a vineyard and orchard. It has been known as Woodstock ever since
Today, Woodstock’s vineyards are certified sustainable, and with warm climate varieties suited to the Mediterranean climate in McLaren Vale, majority of their grapes are dry grown, with minimal intervention.
The hero variety of the region, Woodstock Shiraz is sourced from Woodstock Estate and neighbouring vineyards in Blewitt Springs, McLaren Vale. These vines are all on sandy soils which contribute the floral aromatics to Woodstock Shiraz. The ratio between bunches and leaves are closely monitored to ensure vineyard balance, so that each vine can deliver full, ripe flavours to every bunch.
For this wine, Shiraz is 100% destemmed into small open fermenters where it is pumped over twice daily for 5 days. The wine is then drained and pressed into oak hogsheads where it will finish fermentation and remain for up to 18 months. For this style, maturation in oak vessels provides gradual oxidation and softening of harsh tannins as well as the balanced incorporation of oak character.
This Shiraz displays lifted aromatics, impressive bold tannins and ripe dark fruit character, classic McLaren Vale chocolate and mint underlie the pure fruit of the Shiraz variety in this wine. Cool, patient cellaring of 10+ years will allow gradual development of fruit and oak character to create a rewarding sensory experience
Pairs perfectly with roast meats, sautéed mushrooms, and steamed greens
