San Silvestro, a renowned winery in the heart of the Piedmont region of Italy, offers a distinct take on the traditional Barbera grape through its Piemonte DOC Barbera Passito Appassimento. This wine combines the well-known qualities of Barbera with the appassimento method, a technique commonly used for making wines like Amarone. The result is a rich, robust, and flavorful wine that offers a unique experience for lovers of Italian reds
The appassimento process is an ancient winemaking technique that involves partially drying the grapes after harvest. In the case of San Silvestro’s Barbera, this method enhances the concentration of sugars and flavors, leading to a wine that is both intense and complex. The drying process reduces the water content of the grapes, concentrating their flavors and sugars, resulting in a wine with a higher alcohol content and a fuller body.
A rich and opulent wine, it is striking on the nose for the power of its aromas reminiscent of ripe fruit and marasca cherry jam. In the mouth, however, a slight residual sugar accompanies the velvety and silky sensations of fine tannins.
A very special wine, this Barbera can accompany meat dishes or mature cheeses. Others, however, prefer to sip a glass at the end of a meal as a meditation wine
