Rochefort 8, a Belgian Trappist ale, is a yellowish-brown colour, with more fruits than Rochefort 6 and a slight amount of demi-sec. This variety constitutes the largest proportion of Rochefort beer production. Originally this beer was only brewed for New Year’s Eve celebrations but it’s overwhelming success meant that the monks began to brew it on a regular basis.
