Redacted Whiskey was founded by lifelong friends Michael Cowman and Ronan Collins, whose shared passion for great whiskey, transparency and distinctive artwork inspired them to create their own independent bottling company. Born from countless conversations over a dram and a desire to champion Ireland’s new generation of distilleries, Redacted specialises in limited-edition releases that celebrate exceptional spirits, local artists and the stories behind every bottle. Vatting #37 offers a glimpse into a bygone era of Irish whiskey, produced in collaboration with Blackwater Distillery in County Waterford. This Double Pot Distilled Irish Whiskey is crafted entirely from Irish-grown grains, with a mash bill of 35% barley, 30% malted barley, 15% oats, 10% wheat, 5% rye and 5% peated malt. Drawn from four individual casks, the whiskey is carefully vatted before being diluted and re-casked for a further 12-month finish in a Widow Jane Bourbon barrel. This process encourages greater interaction with the oak, enhancing integration, complexity and balance. Bottled at 44.12% ABV, it is non-chill filtered and contains no added colouring.

Rich and characterful, Vatting #37 combines creamy grain sweetness with layers of vanilla, caramel and toasted oak. Notes of orchard fruit and honeyed malt are complemented by gentle rye spice, subtle earthy smoke and warming bourbon-cask influence. The palate is smooth and rounded, leading to a long, satisfying finish with lingering spice and oak.
