His handshake promise to purchase their grapes laid the foundation for a winery built on trust, community, and a deep respect for the region’s people. With fruit sourced from a range of subregions – including the cooler Adelaide Hills, elevated Eden Valley, and the Barossa Valley floor – the Hill & Valley range captures the diversity of local terroir. Low-intervention winemaking ensures each site is expressed with clarity and character.

Made from 100% Barossa Cabernet Sauvignon, this wine is fermented and aged with care to showcase both power and finesse. Aged in a combination of seasoned oak, it balances plush fruit with well-integrated structure.

Expect rich, concentrated aromas of blackcurrant, blueberry, menthol and chocolate-mint. On the palate, layers of cassis, blue fruit and liquorice give way to fine-grained tannins, with lingering notes of charred spice and subtle cigar box.
