The Echlinville Distillery has built a reputation for reviving some of Ireland’s most historic whiskey brands, combining traditional craftsmanship with a deep respect for local heritage. Located on the Ards Peninsula in County Down, the distillery is dedicated to restoring the region’s place at the heart of Irish whiskey production. Alongside the successful revival of Dunville’s Irish Whiskey, Echlinville has brought the legendary Old Comber brand back to life after an absence of almost 70 years, honouring one of the great names of Irish whiskey history.
Originally founded in 1825, Old Comber earned a reputation for producing bold, flavourful pot still whiskey before the distillery fell silent in 1953. This 7 Year Old Single Pot Still marks the return of the style that made the brand famous. Distilled entirely from barley grown, harvested and traditionally floor malted at Echlinville, it is matured for seven years in dunnage warehouses before being finished in a combination of Oloroso sherry, Tawny Port and Ruby Port casks. As Ireland’s only completely single estate pot still whiskey, it showcases an exceptional level of provenance and attention to detail.
The nose is inviting and expressive, with sweet vanilla, fragrant pine and fresh melon giving way to cinnamon-poached pears, warm cherry Bakewell tart, toasted almonds and figs in caramel syrup. Rich, creamy and luxurious on the palate, flavours of barley sugar sweets, orchard fruits and Manuka honey evolve into pecan pie, red berries, glazed cherries and dark chocolate laced with crystallised stem ginger. The finish is long and warming, revealing notes of banana and maple pancakes, clove, nutmeg and cocoa, before lingering white pepper and ginger spice bring the whiskey to a satisfying close.
