From hillside vineyards in the Haute Vallée of Limoux, grapes are grown on limestone-rich soils at high altitude, where cool conditions help retain natural freshness and purity. This particular Cabernet Franc is a striking example—showing not only varietal precision but a true ‘gout de terroir,’ a flavour shaped by the land itself. Harvested at perfect ripeness in mid-September, the grapes undergo a cold maceration before a classic fermentation in stainless steel, preserving the fruit’s vitality and expression.
