The Limestone Coast is one of Australia’s most distinguished wine regions, known for its cooler climate and diverse soil types. Located in the southern part of South Australia, this area benefits from the cooling influence of the Southern Ocean, making it an ideal environment for the cultivation of Cabernet Sauvignon. The region’s limestone-rich soils, combined with long sunlight hours, allow the grape variety to ripen slowly and evenly, which is key to developing its characteristic deep flavours and tannin structure.

At the heart of the Limestone Coast lies Coonawarra, a sub-region famous for its distinctive “terra rossa” soils that have become synonymous with some of Australia’s finest Cabernet Sauvignon wines. Heartland’s Directors Cut Cabernet Sauvignon is an expression of this unique terroir, showcasing the region’s potential to produce rich, age-worthy wines with complexity and finesse.

The grapes for the Directors Cut are handpicked from the best blocks of the vineyard, ensuring that only the ripest and most flavourful fruit is used. The wine undergoes a traditional winemaking process, including fermentation in small open-top fermenters, where the grapes are gently extracted to preserve the natural flavours. Following fermentation, the wine is aged in French oak barrels to impart subtle spice and oak complexity, while allowing the natural fruit to shine.

On the nose, it is a rich and complex bouquet of blackcurrant, ripe blackberry, and plum, with layered aromas of dark chocolate, tobacco, and hints of cedar from the oak maturation. The wine’s aromatic profile is a balanced mix of fruit and savoury elements, offering a captivating introduction to what follows on the palate.

On the palate, dark fruit with notes of blackcurrant, cassis, and a touch of mint. The wine’s tannins are firm yet well-integrated, offering structure and grip, while the acidity provides balance and freshness. Subtle notes of chocolate, mocha, and tobacco add layers of complexity, leading to a long, elegant finish with lingering fruit and spice.

Pairs beautifully with grilled meats, such as a succulent steak or a rack of lamb. The wine also complements hearty stews, roasted vegetables, and dishes with rich sauces like beef bourguignon or a rosemary-infused lamb roast.
