Description
The Wild Sauvignon by Greywacke; as the name suggest is made using wild yeasts and represents a unique take on an otherwise repetitive style. Fermentation takes place in old French oak barrels with occasional lees stirring and around three quarters of the barrels underwent malolactic fermentation. A hand crafted wine that displays unique aromas and flavours, on the palate a fresh combination of peach skin, nectarine, fennel and brioche, the finish is succulent and crisp with an almost flinty dryness.
