Founded by Derry-born winemaker Jack Francis, this winery is the result of a journey that began in Argentina in 2016 while studying Environmental Science. Inspired by the world of wine, Jack went on to complete a Master’s degree in Viticulture before gaining experience across France, Germany and Australia. He eventually settled in Austria, where he embraced biodynamic viticulture and low-intervention winemaking. Today, he crafts organic wines that combine the purity of Austrian terroir with the character and storytelling spirit of his Irish upbringing.
Gloaming Rime is an organic Grüner Veltliner made with a thoughtful, low-intervention approach. Around 70% of the fruit undergoes whole-bunch pressing before fermentation in stainless steel, preserving freshness and varietal purity. The remaining 30% spends four days on skins before fermenting in ceramic vessels, adding texture and complexity. The wine is then matured in old French oak, allowing subtle oxidative nuances to develop without overpowering the fruit.
Fresh yet textured, Gloaming Rime balances vibrant citrus and orchard fruit with a gentle savoury depth. Flavours of lime, grapefruit and green apple are complemented by softer oxidative notes, creating a wine that is both energetic and layered, with a long, characterful finish.
Its freshness and texture make it a versatile food partner, pairing beautifully with grilled fish, roast chicken, pork dishes, seasonal vegetables and soft cheeses. It also works particularly well with dishes featuring herbs, citrus or gentle spice.
