For the third Distiller Series, Australian Four Pillars Distillery have used seasonal native Australian and Japanese botanicals. Head distiller from Kyoto, Japan, Alex Davies collaborated with Four Pillars in Yarra Valley. The gin has bright aromas of pine needle, green citrus from yuzu fruit and desert lime, and light green tea. Quandong and kinmokusei add fruit flavour and the texture is driven by hinoki, red pine and dense juniper. 43.8% ABV, 700ml bottle.
