Fog Mountain Cabernet Sauvignon

Fog Mountain Cabernet Sauvignon is a refined expression of California’s diverse terroirs, produced by Fog Mountain Winery, part of the Boisset Collection. This wine pays homage to the Californian mountain ranges and the cooling fog that envelops them, which has a significant influence on the region’s viticulture. The fog provides a cooling effect, creating an ideal microclimate that prolongs the growing season and allows grapes to ripen perfectly at an ideal pace

The wine is crafted from 85% Cabernet Sauvignon, complemented by 10% Petit Verdot and 5% Petite Syrah, sourced from sustainably farmed vineyards across California, including regions like Lodi and Paso Robles. The wine underwent fermentation in stainless steel tanks, followed by 100% malolactic fermentation. It was then aged partially in oak for six months prior to bottling, a process that enhances its complexity and smoothness.

In the glass, the wine displays a deep garnet hue. The bouquet opens with alluring aromas of dark red fruits, floral notes, and cloves, complemented by subtle notes of blueberry and a hint of minerality. On the palate, it presents rich flavours of dried plums, Medjool dates, red currants, and bright berries. The wine has soft, round tannins and a lingering finish, making it a well-balanced and approachable choice

This Cabernet Sauvignon pairs beautifully with dishes featuring bold flavours and rich textures. Ideal accompaniments include grilled red meats, lamb chops with fennel relish, and meat dishes involving a peppery sauce. The wine’s structure and depth also make it a suitable match for hearty vegetarian dishes and aged cheeses
