A superb single cask edition of Dunville’s that has been matured in a lone oloroso sherry cask (number 989). This release from the Echlinville Distillery has been sourced from another distillery and transferred into the sherry cask for a finishing period before being bottled at 55%.
Deep amber in colour, this whisky opens with bold aromas of orange marmalade enriched by cloves and nutmeg. These spicy top notes are followed by layers of stewed dark fruits, caramel-drenched chocolate, sweet tobacco, and the comforting scent of freshly baked cinnamon Danish pastries.
On the palate, it introduces gentle warming spices, clean malted barley, and toasted nuts. A subtle hint of cola cube sweetness blends seamlessly with the richness of Jamaican spiced ginger cake, gradually building into a flood of indulgent Christmas flavours. Think of hot sherry-soaked mince pies, figs and dates, and dark cherries simmered with winter spices into a mulled fruit compote. This is balanced by the creamy smoothness of sherry and vanilla Chantilly.
The finish is long, luxurious, and deeply satisfying. Flavours of warm spiced Christmas pudding mingle with burnt orange syrup, delicate traces of liquorice, and the rich decadence of black forest gateau. Notes of frothed latte and dark chocolate laced with chilli add complexity, while the warmth of festive spices, aged oak from dunnage warehouses, and lingering sweet tobacco create a truly lasting impression.
