Gastronomy and Armagnac, two passions that have become well-established values within the Darroze family. Early in the 1970s, Francis decided to age the eaux-de-vie himself, in his own cellar, under his sole control. He then tracks the Gascon countryside in search of the best pieces from different properties. His son Marc, a trained oenologist, closely monitors the breeding of Armagnacs. He works with the same rigor and passion as his father. In just 30 years, the bottle collection now stands at more than 250 Armagnacs in more than 50 vintages! It is thanks to this diversity that Marc Darroze has been able to build the “Grands Assemblages” collection.
After 10 years of contact with oak wood, the Armagnac begins to take on aromas of aging. On the nose, it is rich but with a zesty character – fruit cake, with candied fruit and sultanas, delicate spice and a drizzle of citrus. The palate is dry and fragrant at first, with delicate floral notes gradually revealing toffee sweetness and a darker, coffee and burnt sugar background before a long finish, with sweet grapes and sharp apple fading to lingering spice. Still fiery, this eau de vie will gain in complexity after a few minutes of aeration in your glass.
