Copeland Rhuberry Gin is a fruit-forward, handcrafted spirit that balances vibrant County Down produce with a classic juniper-led gin profile. Distilled at the Copeland Distillery in Donaghadee, this gin brings together locally sourced rhubarb and blackberries to create a naturally sweet and refreshing spirit that remains unmistakably gin.
The process begins with fresh rhubarb and blackberries delivered straight from County Down farms. These, along with selected botanicals, are soaked in alcohol for up to 24 hours before being transferred to the pot of the distillery’s 300-litre copper column still. More fresh fruit and botanicals are added at this stage to build complexity. After distillation, the gin is brought down to 37.5% ABV with pure water, rested for two weeks, and then hand bottled and labelled on site.
The result is a well-balanced gin with bright, fruity character. Juniper leads on the palate, with subtle sweetness from the rhubarb and blackberry, creating an approachable and flavourful profile. Perfect served with tonic and garnished with a blackberry and a twist of lemon peel, or as a fruity twist in sparkling cocktails.
Located just a stone’s throw from Donaghadee’s historic harbour, Copeland Distillery opened its doors in 2019 in a renovated cinema and bottling plant, with a vision to become Northern Ireland’s most innovative craft distillery. The distillery is home to three copper stills—Betty, Hessie, and Pam—named after the founder’s grandmothers and mother, reflecting the deep sense of community and heritage that underpins every Copeland spirit.
