Copeland 25.1 Single Malt Irish Whiskey – Batch 1 is an exceptional expression crafted to stand apart, embodying both delicacy and bold character in equal measure. Produced on Pam, the distillery’s first commissioned still, this inaugural batch showcases the meticulous approach and adventurous spirit behind its creation.

The whiskey begins with a distinctive mash bill of 90% malted barley and 10% chocolate malt, double distilled to highlight purity while retaining depth. Maturation involves a carefully considered journey: three 200-litre American Bourbon first-fill casks matured the whiskey for 4 years and 9 months, after which it was finished for 5 months in Virgin American Oak (char level 4) casks. This is complemented by the addition of a quarter cask fully matured for 5 years and 5 months in a first-fill Oloroso sherry cask, adding further complexity. Altogether, the whiskey rests for over 5 years, achieving a harmonious balance of flavours.

On the nose, it opens fresh, sweet and slightly oily, revealing orange bitters, oak shavings, vanilla buttercream and a subtle hint of blanched almonds. The palate unfolds with sweet oak and vanilla, lightly toasted coconut and oak tannins, followed by delicate notes of citrus, cocoa powder and a gentle clove spice. The finish is warm, sweet and medium in length, with an elegant touch of dry dark chocolate and nutmeg lingering gracefully.
