Château l’Ermite d’Auzan’s organic and biodynamic certification is a testament to its commitment to the environment and to the quality of its wine. By eliminating synthetic chemicals and instead promoting biodiversity and natural soil health, the vineyard allows its grapes to truly reflect the terroir. In the biodynamic approach, farming is synchronized with lunar cycles, enhancing the vitality of the vines and the surrounding ecosystem.
The estate encompasses 80 hectares of sunny, south-facing vineyards planted on sandstone soils and benefitting from Mediterranean breezes that cool the vines in the summer. The vines are 25 years old and yields are around 50 hl/ha. Grapes are destemmed and fermented traditionally for 15 days to ensure a good balance of fruit and tannins.
A blend of 40% Syrah, 30% Mourvèdre and 30% Grenache
On the nose, intense, bright and ripe raspberry Grenache fruit balanced by peppery, savoury characters from the Syrah and Mourvèdre. Generous but properly balanced and underpinned with smooth, ripe tannins
The bold character of Château l’Ermite d’Auzan Rouge makes it a great choice for pairing with a variety of dishes. It’s a natural fit for Mediterranean flavors, enhancing the richness of roasted meats, hearty stews, and rosemary-and-thyme-seasoned grilled lamb. For a vegetarian option, it goes wonderfully with a roasted vegetable tagine or ratatouille. Hard cheeses like aged Gouda or Manchego are also fantastic companions, bringing out the wine’s depth and complexity.
