Tucked away down a long, winding drive off the bustling Via Prata, the Olim Bauda estate emerges like a hidden treasure. As the path gently ascends through a grove of trees, visitors are finally greeted by the family home—sometimes shrouded in rolling mist if arriving during truffle season. Olim Bauda is run by three dedicated siblings, Dino, Diana, and Gianni, who have committed themselves to crafting fresh, expressive Barbera d’Asti and vibrant, pure Gavi with a delicate, low-intervention approach. These wines, like the estate itself, are well worth the journey.

Since 2019, Olim Bauda has embraced organic vineyard practices Their commitment to sustainability follows the principles of integrated farming, strictly prohibiting herbicides. Careful green harvesting and meticulous bunch selection ensure only the finest, fully ripened grapes make it to production.

In the cellar, the grapes are gently macerated with their skins for a few hours at low temperatures before separation. The clarified and lightly filtered must is then fermented in small stainless steel autoclaves, with foam carefully removed throughout the process. To preserve freshness, fermentation is halted by cooling the must, followed by microfiltration before bottling in November—just two months after harvest.

No oak ageing is used to maintain purity and freshness.
