Using the traditional method the second fermentation takes place in the bottle and is kept in the cellar for fifteen months before disgorging. Very pale yellow. Fine, small pearls of bubbles with a persistent delicate mousse. The slow fermentation and months of ageing give a slightly lemony nose, with touches of butter and yeast derived from the ageing. On the palate the wine is elegant and well balanced. Perfect as an aperitif.
