Cadus is a perfectly formed winery near Tupungato, in the shadow of the Andes Mountains, within the Uco Valley. This high-altitude region has quickly built a reputation as the home of premium Mendozan wines and the Cadus range is no exception. The soil profiles and compositions within the Uco Valley vary within short distances, allowing for different grape varieties and resulting in wines styles with unique characteristics.
Winemaker, Santiago Mayorga, has access to some of the best vineyard sites in Mendoza. The grapes for this wine are sourced from Gualtallary in Tupungato, a micro-region within the Valle de Uco. Tupungato sits between 1300 – 1400masl and is known for its alluvial soils thanks to water erosion of the Andes Mountains overs thousands of years. It’s an extremely dry place with wide thermal amplitude during the day, creating a very distinctive and character rich microclimate. The sandy textured soils run quite deep and limestone and minerals which provide good drainage and encourage richly coloured and highly structured wines. 80% of the wine has been aged in French oak for 12 months (10% new, the rest in 2nd & 3rd use). The yield is 6,000 kg/Ha limiting production been to just 13,000 bottles.
This wine is a full bodied yet wonderfully elegant Cabernet. The nose is very rich, with deep cassis and black currant fruit. The palate displays great purity of fruit with gentle spice from the French oak which helps frame the wine rather than overpower it. The finish is long and fresh with great acidity and balance.
Pairs perfectly with juicy steak or lamb but is also fabulous at the end of the meal with firm cheeses.
