Billecart Salmon is one of the rare Champagne houses being under the ownership of the original family. Established in 1818 by Nicolas-Francois Billecart, the vineyard is supplemented with grapes bought in from the Marne Valley and the Montagne de Reims. Really elegant and light, with lightly toasted brioche, lemon, pear and white flowers. Crisp acidity is deliciously balanced by delicate yet creamy mousse. Serves ideally with langoustines or foie gras parfait on toasted brioche.
