This is where Ben Glaetzer shows his true skill, with the ability to blend separate parcels of fruit to create a seamless wine. The Bishop is a blend of Shiraz from 35 -150 year old vines; the younger fruit provides vibrancy while the older blocks contribute structure, intensity of fruit and complex flavour layers. Crème de Cassis, violets and Asian spices are evident on the palate which is full yet beautifully balanced by freshness and smooth tannins.
