Anselmo Mendes is a renowned Portuguese winemaker celebrated for his expertise in crafting exceptional wines from the Vinho Verde region. Known as the “Master of Alvarinho,” Mendes combines innovation with tradition, producing wines that highlight the unique characteristics of the terroir. His winery, located in the Minho region, specializes in high-quality white wines, particularly from the Alvarinho and Loureiro grape varieties. With a strong commitment to precision winemaking and sustainability.
The grapes for Pássaros Alvarinho e Loureiro are meticulously handpicked into small boxes and swiftly transported to the winery to preserve their freshness. Upon arrival, they undergo total destemming followed by gentle pressing of the whole grapes. The must is then subjected to extreme cold clarification to ensure purity. Fermentation is conducted slowly at controlled low temperatures ranging from 12 to 16ºC. The wine is aged for a minimum of three months on fine lees with regular bâtonnage, enhancing its complexity and mouthfeel.
The nose is intensely aromatic, displaying a vibrant bouquet of citrus fruits, white flowers, and tropical hints. A well-structured and elegant wine, offering a perfect balance between the floral and fruity characteristics of Loureiro and the minerality and depth of Alvarinho. Long and refreshing, with lingering citrus and mineral notes that enhance its complexity.
Perfect for oysters, grilled fish, and prawns complement the wine’s acidity and freshness. Light summer salads with citrus dressings enhance the wine’s bright fruit flavours. The wine’s aromatic intensity makes it a great match for sushi, Thai curries, and spicy dishes.
