Among its distinguished offerings is the Tullum Pecorino Biologico, a white wine crafted from organically cultivated Pecorino grapes within the Tullum DOCG appellation.
The Tullum Pecorino Biologico is produced from at least 90% Pecorino grapes sourced from certified organic vineyards located on the hilly terrains of Tollo. The winemaking process begins with cryomaceration of the crushed grapes, followed by spontaneous fermentation utilizing the natural yeast flora present on the organic grapes. This fermentation occurs with skin contact and continues in concrete tanks. The wine then matures on fine lees for approximately six months before being bottled without filtration or clarification, ensuring the preservation of its natural characteristics.
On the nose, it presents a bouquet of fresh flowers and ripe citrus fruits, notably lemon. The palate is greeted with flavours of citrus, peach, melon, and a hint of almonds, all balanced by gentle acidity and a creamy texture. This combination provides a refreshing and light experience.
This versatile wine pairs exceptionally well with a variety of dishes. It’s an ideal companion for seafood, including fried calamari and lean fish, as well as salads and vegetarian dishes. Its crisp acidity and fruit-forward nature also complement medium-aged cheeses and light poultry dishes.
