Redacted Whiskey was founded by friends Michael Cowman and Ronan Collins with a mission to champion transparency, creativity and the new wave of Irish distilling. Working closely with some of Ireland’s most exciting producers, Redacted showcases unique, small-batch releases that highlight exceptional casks, innovative maturation and the stories behind the spirit. Each bottling offers whiskey enthusiasts a rare snapshot of a distillery’s journey, paired with distinctive artwork and a commitment to complete openness about what is in the bottle.
This limited-edition release features a 5-year-old Single Pot Still Irish Whiskey from Boann Distillery, one of Ireland’s most progressive modern distilleries. Distilled from a traditional mash bill of 50% malted and 50% unmalted barley, it captures the revival of Ireland’s iconic pot still style while showcasing Boann’s emerging house character. Matured in a remarkable rejuvenated French oak cask from the renowned Forêt de Tronçais, the whiskey combines the influence of a former Premier Grand Cru Classé Bordeaux barrel with the depth and complexity of newly activated oak. Bottled from a single cask at 42.5% ABV, non-chill filtered and with no added colouring, it offers a rare glimpse into the future of this exciting distillery.
The exceptional oak influence shines throughout the whiskey. Aromas of cocoa, roasted coffee, honeycomb and soft orchard fruits lead into a rich, full-bodied palate layered with caramelised apples, dark chocolate and warming spice. The finish is long and elegant, with lingering toasted oak, gentle tannins and a refined dryness that reflects the tight-grained French oak from Forêt de Tronçais.
