Copeland 25.3 Single Malt Irish Whiskey is a considered and expressive release that continues the distillery’s commitment to crafting distinctive Irish single malts. Produced from a classic mash bill of 100% malted barley and double distilled for clarity and character, this edition reflects both patience and precision in its journey from cask to bottle.

For 25.3, eight select casks were sourced back from the original 125 owners and chosen for their individual personality and harmony as a collective. These casks range from 5 years and 2 months to 5 years and 7 months in age, forming a layered foundation shaped by Bourbon and Oloroso influences. The whiskey was then finished in a 225-litre ex-California Pinot Noir cask, previously used to finish Copeland’s Smugglers Reserve Rum. This rare cask imparts an additional depth of ripe fruit, gentle spice and rounded sweetness, enriched by a subtle echo of rum warmth and red wine elegance.

On the nose, 25.3 offers a vibrant medley of orchard fruits, soft vanilla and red berry tones, underpinned by light oak and a touch of warm spice. The palate is beautifully rounded, opening with creamy malt and sweet oak before developing notes of dried fruit, soft caramel, baking spice and a delicate hint of toasted sugar from the rum influence. Nuances of dark cherry and gentle tannin from the Pinot Noir cask bring lift and structure.

The finish is smooth, warming and medium-long, leaving impressions of sweet spice, subtle fruit skins and a faint echo of cocoa.
